Savory Madeleines

Sweet madeleines are delicious of course, however this savory variant to this French classic is absolutely fabulous as well, not to mention super easy!
Equipment
- madeleine silicone baking mold or baking tin
- hand mixer
- zesteur
Ingredients
- 40 gr self rising flour
- 1 egg
- 80 ml yoghurt
- 30 gr Parmigiano Reggiano
- 3 sprigs fresh thyme
- 1 pinch of salt
- 10 gr butter
- some extra flower
- 1 lemon
- fresh parsley
Instructions
- Preheat the oven to 220℃.
- Grate the Parmesan with a fine grater.
- Mix the flour, egg, yoghurt, Parmesan, salt and the thyme leaves.
- Butter the mold and sprinkle some flour over it. Remove excess flour by shaking the mold a bit above the sink.
- Now fill the mold with the mixture.
- Put it in the oven for 10 minutes.
- Meanwhile zest some lemon skin (only the yellow, the white is bitter) and chop some fresh parsley.
- After 10 minutes the madeleines will be golden and they'll come out of the mold easily.
- Sprinkle some zest and parsley over them and serve while still warm and fresh, that's when they'll taste best!
