Equipment

  • madeleine silicone baking mold or baking tin
  • hand mixer
  • zesteur

Ingredients
  

  • 40 gr self rising flour
  • 1 egg
  • 80 ml yoghurt
  • 30 gr Parmigiano Reggiano
  • 3 sprigs fresh thyme
  • 1 pinch of salt
  • 10 gr butter
  • some extra flower
  • 1 lemon
  • fresh parsley

Instructions
 

  • Preheat the oven to 220℃.
  • Grate the Parmesan with a fine grater.
  • Mix the flour, egg, yoghurt, Parmesan, salt and the thyme leaves.
  • Butter the mold and sprinkle some flour over it. Remove excess flour by shaking the mold a bit above the sink.
  • Now fill the mold with the mixture.
  • Put it in the oven for 10 minutes.
  • Meanwhile zest some lemon skin (only the yellow, the white is bitter) and chop some fresh parsley.
  • After 10 minutes the madeleines will be golden and they'll come out of the mold easily.
  • Sprinkle some zest and parsley over them and serve while still warm and fresh, that's when they'll taste best!
