Preheat the oven to 220℃.
Grate the Parmesan with a fine grater.
Mix the flour, egg, yoghurt, Parmesan, salt and the thyme leaves.
Butter the mold and sprinkle some flour over it. Remove excess flour by shaking the mold a bit above the sink.
Now fill the mold with the mixture.
Put it in the oven for 10 minutes.
Meanwhile zest some lemon skin (only the yellow, the white is bitter) and chop some fresh parsley.
After 10 minutes the madeleines will be golden and they'll come out of the mold easily.
Sprinkle some zest and parsley over them and serve while still warm and fresh, that's when they'll taste best!
