Codfish with mango salsa

A light and quick meal for hot summer nights.
Ingredients
- 4 codfish filets
- 4 portions jasmin rice
- 1 mango
- 150 gram mini honey tomatoes
- 1 spring onion
- 2 sprigs fresh cilantro
- 2 limes
- chili pepper fresh or dried according to preference
- peanut oil
Instructions
- Preheat the oven to 160 degrees.
- Boil the rice for 10 minutes.
- Put some oil and the codfish filets in a baking tray and put it in the oven for 15 minutes.
- Meanwhile, cut the mango and tomatoes in small pieces and put them in a bowl. Depending on your preference, either cut and add some thin rings from a fresh chili pepper or grate some dried red chili pepers over it. Add the juice of 1 lemon.
- When the rice is cooked, let it steam for another 10 minutes.
- Cut the spring onion in rings and chop the cilantro finely.
- Serve by putting some rice on each plate, add a codfish filet, some mango salsa and finish with spring onions and cilantro. Add a lime wedge.
