Preheat the oven to 160 degrees.
Boil the rice for 10 minutes.
Put some oil and the codfish filets in a baking tray and put it in the oven for 15 minutes.
Meanwhile, cut the mango and tomatoes in small pieces and put them in a bowl. Depending on your preference, either cut and add some thin rings from a fresh chili pepper or grate some dried red chili pepers over it. Add the juice of 1 lemon.
When the rice is cooked, let it steam for another 10 minutes.
Cut the spring onion in rings and chop the cilantro finely.
Serve by putting some rice on each plate, add a codfish filet, some mango salsa and finish with spring onions and cilantro. Add a lime wedge.
