Codfish with mango salsa

A light and quick meal for hot summer nights.

Ingredients
  

  • 4 codfish filets
  • 4 portions jasmin rice
  • 1 mango
  • 150 gram mini honey tomatoes
  • 1 spring onion
  • 2 sprigs fresh cilantro
  • 2 limes
  • chili pepper fresh or dried according to preference
  • peanut oil

Instructions
 

  • Preheat the oven to 160 degrees.
  • Boil the rice for 10 minutes.
  • Put some oil and the codfish filets in a baking tray and put it in the oven for 15 minutes.
  • Meanwhile, cut the mango and tomatoes in small pieces and put them in a bowl. Depending on your preference, either cut and add some thin rings from a fresh chili pepper or grate some dried red chili pepers over it. Add the juice of 1 lemon.
  • When the rice is cooked, let it steam for another 10 minutes.
  • Cut the spring onion in rings and chop the cilantro finely.
  • Serve by putting some rice on each plate, add a codfish filet, some mango salsa and finish with spring onions and cilantro. Add a lime wedge.
