Pineapple & mint sugar

This easy dessert can be made even easier and slightly healthier by replacing the meringue by some greek yogurt. đ
Equipment
- handblender
- 4 (wine) glasses
- piping bag
Ingredients
Pineapple
- 1 pineapple
Meringue
- 2 eggs (or egg whites)
- 50 gr granulated sugar
- 30 gr powdered sugar
Mint sugar
- 2 tbsp sugar
- 2 sprigs of fresh mint
Instructions
Pineapple
- Clean the pineapple, making sure to remove all the pineapple 'eyes', and cut it in small cubes.
Meringue
- Separate two eggs and put the egg whites in a clean (grease-free) mixing bowl. Beat the egg whites with a mixer.
- Then add 50 grams of granulated sugar and mix again until the sugar is well dissolved.
- Then add 30 grams of powdered sugar. First carefully stir this into the stiff egg whites (to prevent covering yourself and your kitchen in white powder) and then mix again until the sugar is well mixed into the egg whites.
Mint sugar
- Put the sugar and the leaves of the fresh mint sprigs into the bowl of a handblender and blend until the mint and the sugar are equally sized, making it more or less green sugar.
Serving
- Divide the pineapple cubes over 4 glasses, add some meringue (or Greek yogurt if you prefer the slightly healthier version) to each glass (using a piping bag makes it easier to keep the glass clean while you do) and the add some mint sugar on top.
