Ingredients
  

Salsa

  • 8 Medjoul dates
  • 1 lemon
  • 4 twigs fresh basil
  • 8 macadamia nuts

Cheese

  • soft young goat cheese Brie style
  • or any other cheese you like

Toast or bread

  • any type you like

Instructions
 

Salsa

  • To make the salsa, chop the dates in small pieces, remove the pits. Put them in a small bowl.
  • Add some lemon zest, then cut the lemon in half and add the juice of half a lemon. Give it a good mix with a spoon or your hands.
  • Chop the nuts and add to the dates.
  • Cut the leaves of the basil finely and add to the dates as well.

Cheese & toast

  • The salsa goes well with any cheese and would therefore be a wonderful addition to your cheese board.
  • You could however also decide to serve it as an amuse or ready made bite. In that case it would go particularly well with young soft goat cheese, made in Brie style.

Wine suggestions

  • A cheese board can take a wide variety of shapes and any wine suggestion would obviously strongly depend on the choices of cheese, however in any case be careful with high acids or otherwise wines that don't combine well with the sweetness of the date salsa.
  • If you choose the goat cheese, a Loire Sancerre or Pouilly Fumé could go well with this.
